A Mindful Week Of Food.
This week the Expertrain team decided to try out Mindful Chef. Mindful Chef is a British company whose aim is to make healthy eating possible and accessible for everyone. It all sounded too good to be true to us; they promised to deliver three nights' worth of nutritious food, all with just 15-30 minute prep times and all of the ingredients would be fresh, local and organic. They believe in 'the benefits of reducing your intake of gluten and that refined sugars and especially processed foods should be avoided'. They have therefore centered their product on Paleo, gluten-Free and plant-based diets. We couldn’t wait to give it a try!
Hello Mr Postman!
The box was delivered on Monday morning and everything was in one nicely packaged cardboard box, resembling a hamper. Inside was a cool bag containing the meat and three paper bags labelled chicken, beef and salmon. Alongside the ingredients were three recipe cards, a welcome letter and a discount voucher. It was all very exciting and I couldn’t wait to see the ingredients. All the food arrived fresh and well-packaged (the cold stuff was definitely still cold!) It was great to know ALL the packaging was 100% biodegradable and compostable.
Better than the Chinese?
On Monday evening, I chose to make the first recipe, Asian Spiced Cauliflower ‘Rice’ with Sesame Pulled Chicken. At first I panicked, thinking it looked complicated, but after reading the method I realised I had the exact quantities of each ingredient so I calmed down. Having arrived home from work late, I looked for the meal with the shortest cooking time - this one took only 20 minutes. The method was really easy to follow and it was something completely different to what I would usually make. It was really nice to try cauliflower rice – that’s something I’ll definitely be making again.
On Tuesday, I trained in the evening - so when I got back I was starving! I thought I’d opt for the Salmon En Papillote with Cavolo Nero, Olives & Crispy Asparagus. Now, I couldn’t pronounce the name or work out what the cavolo nero was without a quick search on Google (maybe that’s just me – and it's black kale, by the way) but this dish was actually my favourite; it was so fresh and tasty! The olives gave it such a nice edge and it was so much more exciting than just salmon and veg.
My last meal was the Beef-stuffed Portobello Mushrooms with Spring Greens. I had this on Thursday night, as on Wednesday night I was knackered and didn’t want to cook. Even though the recipes are simple and quick, sometimes you just don’t fancy being told what to eat! That being said, I couldn’t eat this meal quickly enough (so quickly, I didn’t get a photo). It was like a healthy Bolognese without the pasta. Lots of garlic, mushrooms, shallots and mince – delicious!
So many benefits
What I really loved about Mindful Chef is that they are all about a healthy lifestyle, not just weight loss. Obviously, all the meals are healthy and balanced so you will see sustained weight loss, but you will also notice increased energy levels, improved sleep, clearer skin, healthier hair and a general feeling of well-being.
All in all, Mindful Chef provided nutritious and tasty meals, which really hit the spot after a long day. I was worried that as there were no carbs I would still be hungry, but the portions were big enough to fill me up and satisfy any cravings due to the amount of high-quality protein. Everything was so easy to follow and the recipes really did take just 15-30 minutes to prepare! Plus at just £24 for three evening meals, you can’t really go wrong.
