15 Delicious ways with avocado toast

Nothing beats avocado toast as a healthy breakfast, delicious brunch or anytime snack. Packed with good fats from the avocado, loaded with nutrients and really filling too, avocados are one of our favourite choices for a super-healthy start to the day. But it can get a little boring just smooshing your avo and whacking it on a slice of wholegrain bread - no? Good news - we've got 15 ways with avocado toast that will have you eating it every day of the week!

#1. The Classic

Ahhh where do we start with this? Grab yourself some toasted wholegrain bread, smoosh up your avocado (or you can slice it, if you prefer) and spoon onto the toast. If you like, season your avocado with a little garlic salt and chilli flakes, or even a squeeze of lime juice. Poached egg totally optional. One of the quickest, healthiest brekkies around!

#2. Mexican Corn Avocado Toast

Fancy a little taste of Mexico to start your morning? This recipe calls for grilled corn on the cob, making it the ideal snack for BBQ season. But if you don't have grilled corn to hand, fresh cooked corn will do. We love the combo of creamy avocado, buttery sweet corn and salty cheese - yum!

#3. Avocado, Harissa and Goats Cheese Toast with Sun-Dried Tomatoes and Poached Egg

How does avocado toast with harissa, sundried tomatoes, goats cheese and poached egg sound? It's a complete meal so you could enjoy this for breakfast, brunch, lunch or dinner! We love the spiciness of the harissa - you could even make your own if you're feeling creative. Although you shouldn't eat it everyday, smoked salmon served with avocado is one of our favourite toast toppings. Silky, salty omega-3 rich salmon strips, creamy avocado with a squeeze of lemon and some thinly sliced red onion served on top of thick cut wholegrain toast is a totally amazing weekend brunch!

Salty feta cheese and fresh mint are the perfect addition to creamy mashed avocado. For those days where you're not in the mood for an egg with your avo toast (or don't have time), we think this is the next best thing! This recipe uses toasted sourdough but you could use any bread you like really.

Forget bacon and egg, try bacon and goat cheese! Moosh up your avo, whack it on your toast, top with crumbled goat cheese and bacon and ta-da! Who says you don't have time for a (fairly) healthy brekkie?

You don't need us to tell you this is a good way to boost your way towards five-a-day and it's really healthy too!

#14. Avocado Toast with Gorgonzola, Pear and Walnuts

This is a great recipe for Autumn (which believe it or not is right around the corner!) and it's pretty sophisticated too, if you like that sort of thing! Creamy but sharp Gorgonzola cheese goes perfectly with avocado and sweet pear, whilst the crunch of walnuts is just the ideal finishing touch. We'd serve mini versions of these at a party, or perhaps just enjoy one all to yourself for weekend brunch.

#15. Shaved Asparagus Cilantro Tahini Avocado Toast

Don't let the complex-sounding name put you off this recipe. It's simply avocado toast topped with shaved asparagus spears, and a coriander and tahini dressing. It makes a pretty tasty, healthy lunch but be careful who you share it with - asparagus is said to be an aphrodisiac!
