5 Easy To Do Breakfast Recipes

The Expertrain team have been very busy in the kitchen coming up with simple and nutritious breakfast recipes for you all to try. We have had a lot of fun inventing (and eating) everything and we hope you enjoy them as much as we do. Don’t worry, you don’t need to be a master chef to give them a go, anyone will be able to give them a bash. They are quick, simple and most importantly tasty so you have no excuse not to eat breakfast!

Easy Omelette

You will need:

1 tablespoon of coconut oil

2 eggs

1 handful of mushrooms (chopped)

1 handful of baby tomatoes (chopped)

1 handful of fresh spinach

What to do:

Heat the coconut oil in a pan and add the tomatoes and mushrooms to it. Once they are cooked remove from the pan and put to the side. Beat the eggs together and pour the mixture into the pan, leave for 4 minutes and then flip the omelette over. Add the tomatoes and mushrooms to the omelette and leave for a further 3 minutes. Fold the omelette over and pop onto a plate with the spinach, voilà!

Lemon Protein Pancakes

You will need:

1 lemon

1 scoop of vanilla protein powder

1 banana

1 handful of oats

1 egg

1 tablespoon of coconut oil

What to do:

Add the protein powder, egg, banana, oats and a squeeze of lemon to a blender until it becomes a smooth batter. Heat the coconut oil in a small pan and pour a small amount of the batter in. Cook for 3 minutes and then flip and cook for a further 3 minutes. It is important you cook each pancake separately so they don’t get stuck together. Make as many pancakes as you like and finish with a squeeze of lemon.

Hearty Porridge

You will need:

1 handful of oats

1 glass of almond milk

1 handful of cashews and raisons

What to do:

Add the oats and almond milk to pan on a low heat and heat for 4-6 minutes stirring continuously. Now, porridge is a matter of taste, so if you would like yours thicker than average leave it on the hob a little longer. Pour into a bowl and add the raisons and cashews. Enjoy!

Vanilla Protein and Nut-Butter Shake

You will need:

1 banana

1 scoop of vanilla protein

1 glass of almond milk

1 tablespoon of peanut butter

You can use almond butter/cashew butter if you’d prefer!

What to do:

This is very simple. Add all ingredients to a blender and BLEND. Pour into a glass and enjoy all the goodness. Yum!

Avocado and Eggs on Toast

You will need:

2 slices of brown bread

2 eggs

1 avocado

What to do:

First of all you need to scoop the inside of the avocado and put into the blender for 10 seconds to make it into a paste. Now much like porridge everyone has his or her favourite kind of eggs. We suggest fried but you can make fried, poached or boiled, it’s completely up to you. Toast the bread and spread the avocado paste onto it, top with your eggs and tuck in.
